Important information about on-site cooking in stand

Adapted rules which apply to cooking specifically at GastroNord. You will need to apply for a permit to cook. Send your application to us and specify exactly what you will be cooking, which type of equipment you will be using and to what extent at the latest on September 17.

Please also attach a to-scale drawing so we can make an overall assessment. We will then decide if a smoke extractor or carbon filter fan is needed and, if so, the best way to install it. The Event Team of GastroNord, in consultation with the Security Manager, has taken a decision to make an exception for GastroNord and replace the smoke and fire sensors with fire guards. This is to avoid increased costs for exhibitors, who in most cases might otherwise be obliged to order extraction ventilation, even when cooking on a limited scale.
 
General rules: 
- Cooking which generates steam or heat without any odor or unpleasant smell requires no ventilation.  
- Domestic-style cooking involving frying or grilling or other method generating unpleasant smells/odors requires a carbon filter fan.  
- Cooking involving grilling or frying on a larger scale requires ventilation with hood and extractor.  
 
Note! It is always the exhibitor’s responsibility to plan their stand and cooking in such a way that neighboring stands are not inconvenienced by unpleasant odors or strong smells. If relevant complaints should arise from other exhibitors or visitors, cooking must either cease forthwith or ventilation must be installed at the exhibitor’s own expense. It is the actual unpleasant odor that is the problem, not the heat alone, as the fire alarm system is deactivated and extra fire guards are deployed in accordance with the fire protection rules.
 
One alternative to on-site frying or grilling is to prepare food in advance and reheat/cook at the trade fair without unpleasant odors or smoke. There will also be a place to set up a barbecue outdoors, where you can barbecue food with no ventilation concerns.
 
Please note that LPG (liquefied petroleum gas) may not be used at Stockholmsmässan.
