Organic products and Organic balsamic sauce Arvum

Presentation of the organic range of vinegars of Aecovi, in particular the balsamic sauce made from sherry vinegar, and produced in Andalucía.

The sweet vinegars of Aecovi-Jerez, a second level co-operative located in Andalucía, were created in first place for the north-American market, but each day, they cross new borders. The most famous Chefs appreciate the innovative aspect of the product, but also the authenticity of a sherry vinegar. In deed, Aecovi is a cooperative which brings together small wine-growers who take care of the grapes they grown by using traditional methods, but they also benefit from innovative and modern way of production.
The sherry vinegars had succeeded in finding its place in the market, even in the most demanding markets.

‘Arvum’ is the name of Aecovi-Jerez’s extensive range of vinegars, from traditional Solera and Reserva varieties to innovative Pedro Ximénez or Muscat vinegars, and even sweet balsamic vinegar. Arvum’ has infinite gastronomic possibilities, and their hints of dried fruits, liquorice, and raisins are also highly valued in haute cuisine, as well as in making the macerations, marinades, and pickling brines that figure so highly in traditional Spanish cuisine. In this range of products, there are two organic vinegars and one organic must reduction, obtained with the cooking of the Palomino and Moscatel grapes grown in Jerez Area. About vinegars, there is a balsamic sauce made with sherry vinegar and an organic sherry vinegar.

Arvum Organic balsamic sauce :
The Organic Balsamic Sauce Arvum is also made from the cooking of the Palomino and Moscatel grapes grown in the Marco de Jerez, mixed with organic sherry vinegar.
The grapes are grown carefully and with the traditional organic farming process, in vineyards located in Jerez area, Andalucía, and belonging to the denomination of origin “Jerez-Xéres-Sherry”. All our organic products are certified by the Organic Farming Council of Andalucía. The typical taste of wood comes from the aging in oak barrels used for maturing the sherry wine.

Food characteristics :
The strong taste of the Organic Balsamic Sauce Arvum will enhance the taste of your plates, with its strong palate of liquorice, roasted nuts, dried fruits and caramel, but also the colour of your plates : dark mahogany with iodine rim, dense and velvety.
Organic balsamic sauce can be used to enhance plates made from meat, fish, salads or also cheeses.
